Introduced in 1824 by miners who arrived in Mexico from Cornwall England. Pastes were originally prepared with raw meat, potatoes, and vegetables. They were made with a thick crimped edge along one side, so miners could use as handle to hold on to the while eating, discarding the crimped part avoiding cross contamination because miners hands would often be covered in arsenic from the mine. In 2018 the state of Hidalgo was declared "THE CRADLE OF PASTE" a gastronomic and cultural heritage of the state of Hidalgo Mexico. Pastes have evolved to celebrate local flavors, ingredients, and variations of fillings including: Green Mole, Red Mole, Beans, Chorizo Hawaiian etc. Since pronunciation was difficult for Mexican miners, they began to call them PASTES.
